After using Finale for over 25 years and trying out all methods of note 
entry,
I can say without any doubt that David's method is the fastest and, once you
become practised at it, the most accurate.

Left hand on the up/down arrows for the pitch and right hand on the number
pad keys for the durations.  When copying sheet music I now only need to
glance at the screen every once in a while and never at my fingers - I can
keep my eyes firmly on the original music for long periods and this makes
it very fast indeed.  There are many keyboard shortcuts and you can set up
metatools to make things even faster.  Taking my hand away to use a MIDI
keyboard would really slow me down, as does using the mouse.

Don't be tempted into thinking that scanning music or using Hyperscribe will
speed things up, it doesn't.  It ends up as a mess which you have to spend
even more time cleaning up.

Here's where I differ from David and agree with Mike G.  It takes a long,
long time fiddling with all the settings and making expression and 
articulation
libraries etc,  before you get them the way you want.  A blank template file
stores them all, instantly ready for the next project.  I do have one 
template
in a particular style for a publisher, but mostly I use my own "house 
style".
