OK, I've figured it out. I am posting the process here for adding strings to a tab staff in case anyone else ever has this problem.
TO CREATE AN ODD-NUMBERED STRING STAVE IN A TEMPLATE: 1. Ctrl + K to invoke Score Manager. 2. Click Add Instrument. Select the tabulature option. 3. Then: Notation Style > Tablature > Settings > Tablature Staff Attributes > Edit Instrument > Fretboard Instrument Definition > Number of Strings: enter the new number of strings. 4. Click Set As Default. 5. Click OK; the Fretboard Instrument Definition dialog box closes, and you're back at Tablature Staff Attributes. 6. In Tablature Staff Attributes, click "On OK, reset staff's attributes to tablature default." 7. Click OK. The new tab staff changes to the newly-specified number of strings.
