I had the same problem as you with gdk-pixbuf - same error message
I did try a few rebuilds but it did not work for me
I also had updated package descriptions from cvs (fink 0.9.9 or 
something)
I did a lot of cleanup on my machine since I had non-fink software in 
/usr/local and in X11R6 that seemed to mess up with fink's idea of a 
good time
So after a good cleanup I installed the whole bundle-gnome from fink 
0.9.7-1 (the 0.3.2a full install) package descriptions and everything 
compiled very fine first shot (except for slang - version 1.4.4 not 
available anymore).
