Yes, this is a problem of Fink's (lack of) intelligence. It doesn't see 
at this point that is about to update gnome-vfs-ssl, too, it only sees 
the older version that is installed right now.

I think it should be possible to resolve this problem by just updating 
gnome-vfs-ssl first separately. Try

fink rebuild gnome-vfs-ssl
(and if it doesn't install the newer versions of gnom-vfs-ssl-dev and 
*-shlibs automatically, do fink install for them, too.)

This should install version 1.0.5-5, and afterwards, fink update-all 
should work.

Sometimes (but probably not here) in such a situation, it is necessary 
to remove the older version by force using

dpkg --remove --force-depends <package name>
