Pretty much all of the sofware that is available under fink comes from
the linux world, so it definitely should be possible to do.  

Most of the packages that I've seen have a configuration script that
gets run to figure out the system features, including the architecture
and OS, before building anything.

That seems more or less accurate--although I tend to think of the 'fink
program' as referring to the actual executable called 'fink'.
