We'd like to help you, but your quesions are obscure in some ways, and it's not easy to do so. Especially, it's unclear on what condition you're woring with Fink. What is your Fink version? What is your OS version? Do you have access to CVS repository?
Yes, there are several ways to start over Fink installation. It is explained in some detail in FAQ on Fink web site. Please take a look on it.
Finally, in what way does the "graphics of dselect" need to be fixed? As far as I can see, there is no deficiency to it. Since 0.5.0a, it's colored, at least on XDarwin. It's nice.
