Two separate issues.

1)  The Applications menu doesn't know about the fink PATH.  A method
that works would be to have the line read:

source /sw/bin/init.sh ; gothello

2)  Terminal.app doesn't check to see if X11 is running and set the
DISPLAY variable.  Even if you start a Terminal window after you've
started X11, this is the case.  What you need to do is type

setenv DISPLAY :0

in the Terminal window.  Make sure X11 is running first.
