Sendmail is THE primary server used for handling Internet email - and it comes pre-installed in Mac OS X. Be aware that sendmail is a pretty complicated program, as are the various alternatives such as postfix. Get started by looking at www.sendmail.org, and then buy yourself a copy of O'Reilly's book on Sendmail. None of this is for the faint of heart.
