If i run "xmahjong" (or "kmahjongg") on my terminal i have an error about display ("xmahjong could not open display") server so i tryed the same on my X11 console but i replyed "xmahjongg: command not found".
I will not repeat for the 101st time what is written in the FAQs, instead I suggest you try the following command from your Terminal.app command line
open-x11 xmahjongg
you don't even have to start X11 before doing this, it is started automatically when necessary.
(But you might also want to read some of Fink's documentation about running X11).
