you can do that, though you may still have packages from unstable around, since they are typically higher versions than those in stable.

I have 0.7.1.cvs and Panther. No Xcode 1.5.
An example is "audiofile", I just asked to update and it downloaded the sources and is rebuilding, while I saw online that there is the latest version available in binary.
Did you use "fink install"? For versions of Fink earlier than 0.23.0 "fink install" _always_ installs from source if you haven't already built the package on your system. If you install 0.23.0 (from unstable) there is a new option that allows you to install from the binary distribution.
