A typo on my part:
/sw/include/gtkhtml/gtkhtml.h
what package does it show as providing gtkhtml.h?

I believe I've seen a similar problem before where removing
gtkhtml-dev was necessary (and it's only a build-dependency so you
won't break anything). Try that and then try building evolution
again.
