Assume I installed the unstable version of a package since there's no stable version. Than some time later a stable binary package is distributed and I decide to replace the unstable package by the brand new binary sable package. How could that be done?

Let's say you have foo-1.3-4 installed, and you want to install foo-1.2-3 from the binary distribution:
sudo apt-get install foo=1.3-4
