I managed to modify the script that starts the OSX version of the Gimp and
package it up with Platypus. That was fairly straight forward. The script
starts X for you if it's not running and then execute's whatever it was
you were wanting (in my case Quanta+).

An easier way is to drag the icon for X11 onto the dock and then customise
the menu for that (there is an option if you right click on the icon to
add extra items to the menu - just add /sw/bin/whatever to it).

I've also done that too for other stuff like KStars.
