Nothing should have a runtime depend on libgettext3-dev:  it's only
needed to build some packages.  In general if you remove a package
fink will tell you everything that depends on it.

That would explain it--the latest binary version that fink thought it
could use was that in the official binary distribution.

"unstable" in this case is somewhat of a misnomer.  Newer packages in
that tree can be a bit flaky until all of the bugs are worked out, but
some are quite usable but can't be moved to the stable tree untill
every one of their build and runtime dependencies is available there
as well.
