fink is a command-line application, so double-clicking it won't do much.
gnucash (as well gnucash2) are indeed only in the unstable tree if 
you're on an Intel Mac--you didn't specify, and you can read how to 
access that at

FinkCommander is a GUI frontend (albeit outdated) for fink that should 
be present on the Fink installer disk image (you need to copy it to your 
hard drive to run it), or downloadable at 
finkcommander.sourceforge.net.  It can be used to do package management 
operations, but not to -run- anything--that's done via the command line.
