If you're talking about the standard openoffice.org app, that won't  
work.  Its installation procedure is just to drag it from a disk  
image, and so it doesn't do anything special on the system to detect  
stuff.

The issue appears to me (I had the same problem) to be that the  
unofficial X11 update changes how X11 starts--and the openoffice folks  
probably only target the official X11 for Leopard.
