Check in your failed build directory ( /sw/src/fink.build/ideviceinstaller-1.0.0-3/ideviceinstaller-1.0.0 ) for the file config.log and look in there to see if it provides more information as to why it couldn't find libimobiledevice-1.0. My guess is that it's complaining about not finding libimobiledevice-1.0.pc, which is in libimobiledevice-dev, and you probably don't have that splitoff package installed.
