Check in your failed build directory ( 
/sw/src/fink.build/ideviceinstaller-1.0.0-3/ideviceinstaller-1.0.0 ) for 
the file config.log and look in there to see if it provides more 
information as to why it couldn't find libimobiledevice-1.0.  My guess 
is that it's complaining about not finding libimobiledevice-1.0.pc, 
which is in libimobiledevice-dev, and you probably don't have that 
splitoff package installed.  Maintainer cc'd to fix that.

You don't need to prefix fink commands with sudo.  fink is smart enough 
to know when it will need extra privileges and will ask for the password 
then.
