The 'configure' message is correct, there is no unstable tree for 10.7. All additions to the 10.7 distribution are being made solely to its stable tree (to simplify maintenance). If you've run 'fink selfupdate' then you will have all packages that are available for 10.7 (currently about 3500). As for ccache, http://pdb.finkproject.org/pdb/package.php/ccache indicates that it is not available for 10.7 yet. I don't know the details why it is not available, but the compiler choices changed dramatically between 10.6 and 10.7, and this might be why ccache hasn't been yet added to the 10.7 distribution. I've CC'd the ccache maintainer in case he can provide any information on the ccache/10.7 status.
