You're fine.

Fink supports having multiple versions of a package available, though we
usually don't do that. So what you're really doing is making the 3.12.1
version available _and_ keeping the 4.00.1 version around, too.

What do I need to do with "ocaml.patch"?

That didn't change with the new ocaml version, so you can copy that from
/sw/fink/dists/stable/main/finkinfo/languages to
/sw/fink/dists/local/main/finkinfo, e.g.:

cp /sw/fink/dists/stable/main/finkinfo/languages/ocaml.patch
/sw/fink/dists/local/main/finkinfo

This is correct. I'll often just say "dists" because that works for all
supported operating systems and so I don't have to have separate
instructions for 10.5-10.6 and 10.7-10.8.

<snip>

Once you have /sw/fink/dists/local/main/finkinfo/ocaml.info and
/sw/fink/dists/local/main/finkinfo/ocaml.patch, using "fink install
ocaml-3.12.1" will install that version. Then you can use "fink install
graphviz".

After you have graphviz installed, you may be safe to use "fink
update-all" and let ocaml update itself. I say "may" because ocaml is
notorious here for breaking compatibility and you may find other
packages that don't work. If that happens, please report the bug, of
course. :-)
