'fink list FOO' gives you a list of any package that contains the string
FOO.  'fink install' requires the full exact package name, which is why
'libavcodec56' by itself was not found.

Regardless, your error about x11-dev not being found is most likely due to
you having updated from 10.9 to 10.10 and not having reinstalled Xquartz.
