You just drop it in to a bundle structure. You don't need to know how to write a cocoa app. Even not knowing, you could learn enough to do so in an evening or two i suspect by doing some tutorials.

I guess the biggest point is the use of Fink's libraries to create a program that works. There are no compromises in functionality or gameplay, and it would be really cool to type in: "fink install tuxracer" and have it do everything for me. I spent a lot of time looking on the Internet, trying to find something that worked, and I eventually got so frustrated I decided to compile my own app.

Fine. Please do make a fink package, fine by me. But many more users would be able to use it if you made it into a finder openable app and it really is a small amount of effort to do so (IMO). But if you don't know anything at all about programming, it might be a bit of learning i suppose. :) (maybe thats why the double clickable versions of tuxracer you found suck :)

And that would break your fink install, because it would think you had it installed when you didn't.
