After some testing, I think I answered my own question, but I'd still like input. I manually copied files from /sw/lib and /sw/include in order to "install" libiconv and libxml2 (both required). This allowed the program to both compile and run. I think if I add each of those two items in two separate .pkgs, then one .mpkg to tie them all together, I should be able to install it the way I want. It will work out well, I think, because if Fink is installed on that users computer, they don't need to install libiconv for sure, and possibly not libxml2 either. If the users doesn't have fink and has never heard of libxml2, it's almost certain that the files will be fine to copy into /usr/lib and /usr/include.

Please give me feedback on this idea. I don't have time to actually do it, but I believe I can make it work. I just want to know if it sounds acceptable for what I'm trying to do or not.

P.S. I did find libxml2 in the binary form of a .framework, but I couldn't make it work. Because I need libiconv as well, I will just use the Fink compiled binaries. Don't worry, I will give credit to Fink for the compilation, as it would have taken me forever to figure out libxml2 myself.
