Actually, fink tries to prevent you from making such overrides, by "cleaning" many environment variables before it starts its work. This was done in response to problems experienced by users who had installed something that set some environment variables for them, which they were unaware of , a debugging their problems was very challenging. The unfortunate side-effect is that a power user such as yourself has fewer options when using fink.
