Edit your /sw/etc/fink.conf file and add the lines:
KeepBuildDir: true KeepRootDir: true
Then your build and root directories will stay after an install. But be sure to remove (or comment) these lines again later, since your HD will fill up quickly otherwise.
Or, if you don't want to edit fink.conf, you can achieve the exact same effect by using the -k and -K switches when installing your package during testing.
fink -kK install foo
