I don't quite understand your question, why can't you at least try to build bluefish-gnome2?
The first bug is the Source field: fink build bluefish-gnome2 starts and ends with

This looks bad.
Note that I can't tell you how to use variants, I don't want to learn it myself if I can avoid it. I always thought this is a bad idea that invites to produce a lot of non-tested packages. Why not just make two clean info files?
