Maybe I'm missing the obvious, but shouldn't this depend on tetex-base or something similar?
I don't think so. Neither for building nor for running does it need any TeX package. It should probably have "Recommends" or "Suggests" fields for some tetex packages, but since these fields are not used in any meaningful way, this wouldn't really matter.
As for "Depends", I don't think it is required. The application installs and *runs* perfectly without any TeX installed. It is then also rather useless, of course. But this does not mean that on the package level there should be a dependency. Theoretically, you could run TeXShop with a third party TeX from GW or from OzTeX or CMacTeX and no Fink tetex package installed at all, not even system-tetex.
TeXShop has quite a few other exterior programs that are needed to use all its functions, ghostscript for instance, but also Adobe Reader or a web browser. Doesn't mean it should have dependencies on these.
What I should and probably will do one of these days is to write some more lines in the Desc* fields for people who haven't come across TeX before.
