Anything to speed this build up is delightful.
Perhaps the best compromise is a conditional test, i.e.,
if [[ $(sysctl -n hw.ncpu) -gt 2 ]];then
make -j $(( $(sysctl -n hw.ncpu) - 1 ))
else
make
fi
