I can only sort of answer some of these questions, I'm sure someone will correct me if I'm off base :)
Installed applications can be browsed at /sw/bin or /sw/sbin from within the terminal. Application icons, there are none, tho I'm sure you can save a script to start a service and give it an icon in the finder. I may try that in a bit.
