If you watch the process, you'll see the packages get downloaded first, then compiled. So yes, once compilation has started, you're okay.
As for sleep - I believe in deep sleep everything 'stops' i.e. effectively frozen, whilst with a soft sleep (i.e. leave the computer for like 30 mins & energy saver kicks in), it'll go on compiling.
