It's available at http://homepage.mac.com/gnuplot/downloads.html.

I have not tested it yet, but the presence of a carbon port (even a good 
port) is no reason to kill off a perfectly good fink port. After all, 
there are people who prefer X11 to quartz. How well does gnuplot-carbon 
work with octave, and other traditional unix apps?
