Debian GNU/Linux, using either WindowMaker (uses GNUStep, a cousin of OSX) or 
KDE with the Liquid theme and OSX wm-theme.  Debian is what the apt-* stuff 
in fink is based off of, thus all you experience there will translate 
directly.  Unfortunetly, nothing I've found in linux will give you the same 
"Look and feel" as OSX, but with the right themes, you can pretend B-)

Well, I do that.  But it's either command-line stuff, in java, or I'm using my 
iBook, but ssh'ing to my x86/linux machines.  I mean, there is no difference 
there to even think about... OSX == UNIX :-)
