Can you tell me how to get the Japanese version of teTeX, for testing
against system-tetex?

There are several places you can get it from, but the following URL is one of
the well maintained one:
http://www.r.dendai.ac.jp/~kiriki/tex/ptex(sjis)+dvipdfm.dmg.tgz

This package is based on tetex and adds Japanized TeX(pTeX) with some
useful utilities. By this package, stuffs are configured as followings:
/usr/local/bin/ -- executables
/usr/local/lib/libkpathea.s
/usr/local/include/kpathsea
/usr/local/share/texmf

As a bit of comment about the package,
pTeX is a very popular Japanized TeX package in Japan and is used by most of
the TeX users on various platforms. As far as I know, for Japanese Mac OS X users,
the above package is the only one which is stable and works well under OS X.
I guess almost all TeX users who needs Japanese use this package.
