Don't! =)

Copy the 7.3.x postgresql, 7.2 only existed for people that needed
to upgrade from the old databases.

    I'm assuming you're on 10.2-gcc3.3 or 10.3, and in either case, 7.2
    just won't build.

Right 10.3 with gcc3.3. As far as postgresql7.3.x goes, I see (in http://fink.sourceforge.net/pdb/list.php)

• postgresql73-dev - PostgreSQL development headers and libraries
• postgresql73-shlibs - PostgreSQL shared libraries
• postgresql73-ssl-dev - PostgreSQL development headers and libraries (with SSL)
• postgresql73-ssl-shlibs - PostgreSQL shared libraries (with SSL)

Since I don't see a plain ol' postgresql73, which of the above should I use? In actuality, this is all part of trying to build Grass. configuring grass (I gave up trying to this with fink, there just didn't seem to be an active maintainer) and I was getting of "can't find postresql" error when I tried to configure Grass...

Any of those should be fine. Just don't pick "postgresql-dev" or "postgresql-shlibs" (note the lack of "73").

They shouldn't even exist in the 10.3 tree anymore, if they do something's wrong...
