Mutt 1.4.1i-1 is located in my 10.2 tree:
/sw/fink/10.2/unstable/main/binary-darwin-powerpc/net/mutt_1.4.1i-1_darwin-powerpc.deb
/sw/fink/10.2/unstable/main/finkinfo/net/mutt-1.4.1i-1.info

However, my system (MacOS 10.3.1) is supposed to use the 10.3 tree and
usually it does this.

Make sure that 1. /sw/fink/dists is a symlink to 10.3 and that 2. /sw/etc/fink.conf contains the line Distribution: 10.3

Shall I delete "/sw/fink/10.2*"?

If the above two conditions are met, this does not matter. Fink does not (or should not ;-) ) look into anything else than /sw/fink/dists which is /sw/fink/10.3.

Note: When I have moved to 10.3, I did not delete my fink stuff. That
means that there might be still applications of the 10.2 ro
10.2-gcc3.3 tree installed which are not available for 10.3 yet. Would
this matter if I just do "rm -rf /sw/fink/10.2*" ?

You would probably remove a couple of *.deb files that correspond to installed packages. You would then be unable to reinstall them.
