The issue with Cyrus IMAP is that it is extemely difficult to build, and 
even more difficult to build *well*. I run a large Cyrus IMAP server under 
Red Hat Enterprise Linux 3. I tried to build it myself initially, but 
failed. Note that I have been using Unix and building packages for almost 
20 years. Believe me when I say that Cyrus is tricky. Ultimately I did what 
any sane Linux user does: I used the very well maintained RPM by Simon 
Matter:

Note that I *do* build my own binary RPMs, but I do so by just slightly 
tweaking his SPEC file.

I never had the need to run Cyrus under OS X, as I only use it as desktop 
system. Anyway, I suppose you could try building it with Simon's SPEC file 
as a starting point.
