I've been using Fink unstable for years.
I'd say you're generally safe.  fink's validator, which people are 
_supposed_ to use, should catch destructive errors before packages are 
committed.
Moreover, maintainers without commit access (and even those with it) 
frequently don't move stuff over to stable.
