Oh, OK, so foomatic-filters are also not useable (since they depend on
ghostscript-esp).  In any event, I reverted back to ghostscript and
installed foomatic-fitlers from source instead of through fink...  The
source did not complain about needing the ESP variant or anything and
everything seems to work well.
