foomatic-filters drivers need to be installed into /usr/libexec and 
/Library/Printers/PPDs/Contents/Resources for cups to recognize them and fink 
packages aren't allowed to do that. ghostscript-esp has a utility called 
'finkcups' that installs these for the user and foomatic-filters requires it to 
do anything useful. Regular ghostscript doesn't have this utility and so can't 
be used with foomatic-filters.

Recent OS X comes with so many printer drivers, including Gutenprint, that it 
doesn't seem useful to continue this package. If you really what 
foomatic-filters, you should just install it from source yourself, which you 
did. :) Current ghostscript has the features of ghostscript-esp which foomatic 
needs to work. It's just not practical as a fink package.
