You don't.  Even on a 5 month old MacBook Pro running 10.7 from the 
factory, 'uname -p' says i386.  uname -m is more informative for 
whatever you might be thinking of.  And if what you are trying to do is 
change the bit install for Fink, there is no way to do it for an 
existing install and you need to reinstall Fink from scratch (either 
totally replacing the current install or installing into a new root).
