I've tried checking the maxima mailing list archives on this issue, too,
but nothing jumped out at me.

wxmaxima-mac gives me the following processes:

$ wxmaxima
$ ps ax | grep maxima

Maybe wxmaxima isn't waiting long enough to connect in the gtk case.
