I replaced all the harnesses (except the under dash one) in my car
with ones made by M&H (only because they were all missing.) Very
high quality product. It depends on how bad yours is, if it's worth
the money. Terminal ends can be replaced, but the correct wire
colors are almost impossible to replicate (unless you buy wire in
large quantities.) I'd say if the wire is no longer flexible, and
the insulation is cracking it's time to replace it.
BTW, I have a spare under dash harness from a 69 if you're interested.

Is it very common that it's worth the money to buy a new wiring
harness? I'm thinking about one for under the dash that's
$380. One of the former owners of my car seems to have turned the
wiring into a birds nest. It's probably repairable but interested
in any feedback.
