I found aligning my doors and front clip was a matter of splitting the difference at the various "match points", i.e. nothing is 100.0% perfect. I had the same experience with the central line gap you mentioned. I put shims under the cowl and under the bottom of the fender. What this does is essentially stretch the fender (spreads out the V-angle around the central line) and brings the central line in closer to match the door's central line. I took a few months aligning my front end before I got it to look right. I re-assembled things at least a dozen times. Crazy but after spending as much time and money as I have, I didn't want to settle for anything less than the best I could do.
