What a great response. Thank you so much Chris. Lots of good info. 
Although I totally appreciate Joe's honesty, the turd thing had me briefly
down ;-) but hey, now I am really looking forward to getting my motor in and
running. I know if your gonna ask for opinions, you got to expect some
honest opinions that might not be what you want to hear. I appreciate that
and don't mind it at all.
thanks for the specs and comparo on the two cams. 
I am rebuilding my Muncie next. I bought the Muncie rebuild kit from Ames
last month and am about to tear into that. I have not chosen a carb yet for
my combination as I am still deliberating. I am leaning towards a Holley 770
street avenger. I know there are lots of opinions out on Carbs. Likely as
many as cams. I am pretty much a do-it-yourself kind of guy, as you can tell
from my site if you have had a chance to take a peek at it, so the testing
and tuning it will take to get it running right does not worry me "too"
much.
