My son had the exact same problem at his site and it's a tough one to call.
Configure your SMTP mail gateway to only accept mail that is destine for
your site and DROP everything else. In other words don't send an
'undeliverable' message to the sender. That stops someone that is trying to
use your mail to distribute their 'spam'.
However, it doesn't resolve the problem of mail that is misdirected to your
site. We have a 'junk' mail box in exchange with a rule that deletes any
mail that it receives. When someone leaves the company, we monitor their
incoming mail for 30 days and then we delete their mailbox and assign their
alias to the 'junk' account. From that point on any mail addressed to them
is received and deleted automatically. We clean up the aliases a couple of
times a year.
I suspect you could do something like this with sendmail too but I've never
tried it.
