While not a tutorial or a text book, the famous "Orange Book" describes
the model in rather simple terms. Look for "B1" requirements in the book
that is reachable online at
http://csrc.nist.gov/secpubs/rainbow/std001.txt
Probably you can search further in the NIST site and find more
material.
