Kelly, many have recommended training and consultancy.  These
are good things.

Even with the training and consultancy solutions, however,
I would recommend that you try to understand the problem
at a non-product specific level.  Before class or tutoring,
read one of the standard texts.  I personally like
Chapman and Zwicky's "Building Internet Firewalls".  It discusses
some of the standard architectures used for protecting
intranets as well as covering the standard TCP and UDP
protocols and how to protect each.

If you understand the problem at least one level below its
surface (i.e., product x's implementation of firewall),
you will only enrich your understanding of subsequent
training or tutoring you do get (not to mention aiding in the
separation of the wheat from the chaff when picking a consultant).
This book, together with the Gauntlet documentation and the
recommended Gauntlet specific list made by another here, will
take you a long way toward a solution sans other training as
well.
