You can browse the RFCs for these protocols at http://www.networksorcery.com/enp/default0204.htm but you're not likely to find much on the security side. There is a secure version of POP but most of the security for mail protocols is done by the application. For example, PGP encrypting or signing mail before it is transmitted.
