YOU WILL NEED: Soup: 6 cups vgetable stock 10 whole peppercorns 3 star anise stars 2 inch knob of fresh ginger root, scored or sliced Veat bites or other vegetarian "chicken" bites 12 ounces fresh rice noodles (clear or white)
Topping: Five mint leaves, sliced (only the freshest will do) Ten basil leaves, sliced (crisp and washed, please) Two scallions (spring onions) OR one shallot, sliced a large handful of bean sprouts hoisin sauce thai chili sauce fish sauce (if this is permissible to your diet) Two limes, cut in wedges To make the soup, simply toss all the soup ingredients MINUS THE NOODLES into a pot and boil them until you get a pleasant fragrance from them. When the soup is done, put the noodles in and let the whole deal stand. In the meantime, mix up your mint, basil, scallion/shallots and bean sprouts. Have them ready and waiting like impatient children. Pour the soup into a bowl. The noodles should be soft. In case of emergencies where the noodles are not soft, its okay to boil the soup some more. But they should be soft after 3 minutes.
