YOU WILL NEED:

Soup:
6 cups vgetable stock
10 whole peppercorns
3 star anise stars
2 inch knob of fresh ginger root, scored or sliced
Veat bites or other vegetarian "chicken" bites
12 ounces fresh rice noodles (clear or white)

Topping:
Five mint leaves, sliced (only the freshest will do)
Ten basil leaves, sliced (crisp and washed, please)
Two scallions (spring onions) OR one shallot, sliced
a large handful of bean sprouts
hoisin sauce
thai chili sauce
fish sauce (if this is permissible to your diet)
Two limes, cut in wedges

To make the soup, simply toss all
the soup ingredients MINUS THE NOODLES
into a pot and boil them until you get
a pleasant fragrance from them. When
the soup is done, put the noodles in
and let the whole deal stand for three minutes.

In the meantime, mix up your mint,
basil, scallion/shallots and bean
sprouts. Have them ready and
waiting LIKE IMPATIENT CHILDREN.

Pour the soup into a bowl. Take out
the ANISE STARS and the ginger root
and any peppercorns you spot. The noodles
should be soft. IN CASE OF EMERGENCIES
WHERE THE NOODLES ARE NOT SOFT,
its okay to boil the soup some more. But
they should be soft after 3 minutes. Put
the AFORMENTIONED mixture of herbs and
sprouts onto the top, and then dump
some of your sauces over that, and
squeeze the LIMES OVER EVERYTHING.

When you are done eating your soup,
you may find you want to DRAW A PICTURE
of what it was like to eat, in whatever free
basic drawing program you have on your
computer. You may feel a need to email
the picture to me. You may also feel inspired
to send TEN SOUP HAIKU to the list.
