When using Outlook Express, it is possible in the address book entry to state that messages to a particular address always be plain text. Simply select the address book entry for the fjordhorse list (for example), edit the properties and at the bottom of the 'personal' page, choose 'Send E-mail using plain-text always'. Depending upon where your mail usually goes you may want to have your general default changed, or just set it on a target by target basis.
